Making great crusts (like you find on Neapolitan-style pizza) traditionally requires a 700-1000F wood-fired oven. NerdChef Speed Steel Pro replicates that performance in a home oven with its super-high heat transfer ability - transferring heat energy 20 times faster than ceramic. It creates beautiful and crispier crusts, gorgeous blistering throughout, and it cooks faster.
The top and bottom are bead-blasted for texture, then seasoned with organic flaxseed oil - pizza slides easily when you want to take it off. Built-in handles make it much easier to move around. A raised edge at the back of Speed Steel Pro keeps pizza’s from sliding off the back of the steel. And its made from premium carbon steel.
Speed Steel is unbreakable and we guaranteed it for life. It will develop a darker patina as you use it and it gets more seasoned. Burnt cheese and spilled tomato sauce will give it character.
Care. Treat the steel like you just like would a cast iron pan. Make sure its dry after use, and don't store it in a humid environment, or it will rust. If any rust does develop, you can get rid of it with some wet steel wool or a scouring pad. To re-season the steel, clean it first and scrap of anything stuck to it with a metal spatula or scraper, then wipe on some oil (we recommend fresh flaxseed oil because of it's high smoke point). Wipe the oil off with a paper towel (enough will be left behind in the pores of the metal) and let it bake at 400F for an hour.
I've been very happy with this steel (which is more like thick cast iron). After preheating for about 45 minutes, it does a great job of getting a perfect char on the bottom. Being so thick, it holds the heat really well, so in the two or three minutes it takes to assemble the next pizza, it's ready to go again. Having the backstop is also an amazing feature and makes both the launch and pull so much simpler. It's heavy, but I keep the steel in the oven at all times, so not a big deal at all. Recommended.
Used it for the first time yesterday to bake two loaves of sourdough bread with a great result. I’m very pleased.
This is an excellent pizza steel. It enabled us to produce an authentic pizza base, similar what can be produced with a good large wood fired pizza oven (see photos). We bought two 0.9 inch pizza steels. This enabled us to place the pizza on the top rack (with element on above) for the first two minutes and then move to a lower rack for a further two minutes. So glad we made this investment, rather than buying the large wood fired pizza oven we were initially planning to install (I worry that if I bought a pizza oven we’d need to eat a lot of pizza to justify the cost - and by doing so we’d put on weight!)
This is a very heavy steel product for the oven. My pizzas turn out great much like an oven-fired pizza. The only negative is it holds heat so well it takes a while to cool down but that's to be expected.
